This Origine Saint Domingue dark chocolate couverture has a strong cocoa character marked by an appealing bitterness. BEANS ORIGINS :Cocoa is mainly grown in the Northern part of the island, more specifically in the Cibao valley. This is one of the most northern cocoa areas in the world.

FLAVOUR PROFILE :Exotic and fruity, Saint Domingue has a round, bitter cocoa flavour with an exceptionally long last mouth feel, elevated by spices, wine and olives notes.

Santo Domingo yields only small cocoa harvests, but of an outstanding quality. Cultivation is concentrated in the Northern Cibao valley, the most northerly cocoa growing area in the world. Its capital Santo Domingo benefits from the tropical trade winds, mitigating high temperatures and humidity to a perfect balance.
